If you're ever in a pinch and need a quick dish for a party, I hope you'll try this pineapple cheese ball.
This was the simplest dish at my dad's Hawaii 5-0 birthday party, but it was by far the most complimented. It got just as many oohs and ahs as the cake I baked.
The cheese ball was delicious, kept well during the event, and was decorative! Decorative food is good food.
So, here's that recipe: Serves 10
8 oz softened cream cheese
4 oz can crushed pineapple (no, fresh isn't the same)
1/2 cup small diced red pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1 box crackers in hexagonal shapes
1/2 green pepper sliced OR the green top from a pineapple, split in half
Take all the ingredients, minus the crackers and sliced peppers and mix them in a bowl.
Mold it into a half egg shape on a plate.
Decorate it with crackers to look like a pineapple.
At the top, lay the peppers out like the greenery or use the greenery from an actual pineapple!
Easiest thing that ever happened, and it delish.
